feat(network): switch all WiFi to wlan1 (TP-Link T3U dongle)

- INTERFACE = 'wlan1' in yaris_uplink.py
- install_netwatch.sh binds home-wifi, Hotspot, phone-hotspot to wlan1
- Disables wlan0 (onboard) via nmcli device set managed no
- WLAN variable at top of script for easy revert to wlan0 if needed
